Ingredients:
1 kg chicken (medium pieces)
2 cups basmati rice

1 tbsp ginger-garlic paste

Salt to taste
1 tbsp lemon juice
Few saffron strands soaked in warm milk
Charcoal (for smoky flavor)
Mandi Masala (Homemade):
Cinnamon, cardamom, cloves, pepper, cumin, coriander, turmeric, and paprika — sabko roast karke powder bana lein.
Method:
Marination: Chicken ko mandi masala, salt, lemon juice aur garlic paste ke sath 1 hour ke liye marinate karein.
Cooking Chicken: Ek deep pan mein ghee garam karein, onions aur tomatoes ko golden brown tak bhunein. Marinated chicken daal kar 15–20 minutes tak cook karein.
Rice Preparation: Rice ko wash karke soak karein. Chicken ke stock mein rice add karein aur medium flame par cook karein.
Layering: Ek large vessel mein rice spread karein, upar cooked chicken place karein.
Smoky Flavor: Ek small bowl mein hot charcoal rakhein, thoda ghee daalein aur vessel ko cover kar dein 5 minutes ke liye.
Garnish: Fried onions, raisins aur nuts se decorate karein.
